30 Minute High Protein Lunch Bowl with Chicken Beans and Greek Yogurt Dressing

Lunch has a way of disappearing into the busiest part of the day. One minute it is 11:30 a.m., the next you are standing in front of the fridge eating a handful of shredded cheese and calling it “protein.”


This bowl is my favorite fix for that exact moment. It is fast, filling, colorful, and built from ingredients that do real work: lean chicken, beans, Greek yogurt, crisp vegetables, and a few pantry staples that make everything taste bright and fresh.


It takes about 30 minutes from start to finish, less if you have cooked chicken or grains already waiting in the fridge. The Greek yogurt dressing is creamy without feeling heavy, the beans add fiber and texture, and the chicken makes the whole thing feel like a proper lunch instead of a snack pretending to be a meal.

  • 1 cup cherry tomatoes, halved

  • 1 cup diced cucumber

  • 2 cups chopped romaine, spinach, or mixed greens

  • 1/4 cup crumbled feta or shredded cheddar

  • 1/2 avocado, sliced

  • 2 tablespoons chopped cilantro or parsley

  • Lemon wedges, for serving


For the Greek yogurt dressing


  • 1/2 cup plain Greek yogurt

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon water, plus more as needed

  • 1 small garlic clove, grated or finely minced

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon dried dill or Italian seasoning

  • 1/4 teaspoon kosher salt

  • Black pepper, to taste


If you prefer a thinner dressing, add water 1 teaspoon at a time. If you want more zip, add extra lemon juice. If you like heat, stir in a pinch of cayenne or a spoonful of salsa.

How to make the bowl in under 30 minutes


This recipe moves fast when you work in a simple order. Start the chicken first, mix the dressing while it cooks, then assemble everything.


Step 1


Pat the chicken dry with paper towels. Slice it into thin cutlets or bite-size strips so it cooks quickly.


In a small bowl, mix the chili powder, smoked paprika, garlic powder, salt, and pepper. Sprinkle the seasoning over both sides of the chicken.


Step 2


Heat 1 tablespoon olive oil in a large skillet over medium-high heat.


Add the chicken in a single layer. Cook for 4 to 6 minutes per side if using thin cutlets, or about 6 to 8 minutes total for small strips, stirring as needed. The chicken should be golden on the outside and cooked through.


For food safety, chicken should reach an internal temperature of 165°F. Let it rest for a few minutes, then slice if needed.


Step 3


While the chicken cooks, make the dressing.


In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, water, garlic, Dijon mustard, dried dill, salt, and pepper. Taste and adjust. A little more lemon makes it brighter. A little more water makes it easier to drizzle.


Step 4


Warm the beans in the microwave or in a small saucepan if you like them hot. You can also leave them room temperature, especially if you want more of a salad-style bowl.


If your grains are cold, warm them too. Microwaveable quinoa or rice is perfect when time is tight.


Step 5


Divide the grains between two bowls. Add greens, beans, tomatoes, cucumber, sliced chicken, avocado, cheese, and herbs.


Drizzle with the Greek yogurt dressing. Serve with lemon wedges.


That is it. No complicated timing, no hard-to-find ingredients, and no sad lunch energy.
